By popular demand, I have finally made you guys a video on how to make Persian Rice with Tahdig. Ingredients: Serves 4-6 3 cups long grain white basmati rice Butter or vegetable oil 1/2 teaspoon powdered saffron dissolved in 3 tablespoons of hot water (optional) Salt Water Method: In a large bowl wash the rice with cool water a few times to get rid of the extra starch and pour the water out. Soak the rice in 8 cups of cool water, add 3 tablespoons of salt and set aside for at least a couple of hours. In a large non-stick pot that has a tight fitting lid, bring 8 cups of water to a rapid boil on medium-high heat. Drain the soaked rice and pour into the boiling water. Bring the water back to a boil on medium-high heat for about 10 minutes or until the grains are long soft on the outside and hard in the center. Drain the rice in a fine mesh strainer and rinse with cool water a few times. Wash the rice pot with water and and return to heat. Add 2 tablespoons of vegetable oil, 2 tablespoons butter and 1 tablespoon of liquid saffron to the bottom of the pot, move the pan in a circular motion or use a wooden spoon to evenly cover the bottom with oil. Remove from heat and with a large spatula return the parboiled rice back into the pot, building it into a pyramid shape away from the sides of the pot. In order to release the steam make 4-5 holes in the rice with the handle of the wooden spatula. Place the pot back on the stove on medium-high heat, uncovered. Wait about 7-10 minutes or until steam starts coming out of the pot. Gently pour 2 tablespoons oil, 1/4 cup water and saffron over the rice, cover, lower the heat and steam the rice for an hour. It is very customary to cover the lid with a kitchen towel or 2-3 layers of thick paper towels to prevent the moisture from going back in the pot. Nowadays, there are fabric lid coverings especially made for this purpose in Iran. I do recommend using it for making a perfect tah-dig. To serve tah-dig first serve the rice on a platter. Gently mix some of the rice with the dissolved saffron and arrange it nicely on top. Remove the tah-dig with a spatula and cut into small pieces. The only problem or draw back is that there is usually not enough tah-dig to go around. Being the fifth kid out of six children, I know how that feels growing up, fighting over the last piece of tah-dig on the dinner table. That's called preparation for life! Enjoy! Hi friends, today we make a classic Persian dish called KOKO SEEB ZAMINI (کوکو سیب زمینی) which translate to "Persian Potato Pattys". These can be served as an appetizer, street food, or a full meal any time of day. You can also serve it by itself, in a sandwich, with a salad or even with rice. It takes very little time to make and with just a few ingredients, you have a satisfying meal. Ingredients List: - 1 1/4 Kilogram Potatoes (Slightly less than 3 pounds) - 3 eggs - 1 Teaspoon Salt - 1/2 Teaspoon Black Pepper - 1/2 Teaspoon Turmeric - 2/3 Tablespoon Liquid Saffron If your patties are breaking up when you are frying them, you can add either breadcrumbs or flour to the mixture. Khoresh Karafs - Celery Stew Ingredients: Serves 4-6 2 pounds stew meat (beef or lamb), washed and cut into cubes 1 large onion, peeled and chopped 2 heads of celery, washed, cut into 1-inch pieces 2 bunches fresh flat-leaf parsley, finely chopped 2 bunch fresh mint, finely chopped or 2-3 tablespoons dried mint 2 large cloves of garlic, minced 2-3 tablespoons lime/lemon juice (can be adjusted to your liking) 1/2 teaspoon turmeric Salt and pepper to taste Vegetable oil Water Method: In a large pot, saute chopped onions in 3 tablespoons of vegetable oil over medium-high heat until they become light golden brown. Add the garlic and saute for an additional 2-3 minutes. Add the turmeric and the meat, stir and brown the meat on all sides. Add salt and pepper to taste. Then add 4-6 cups of water, bring to a boil, reduce the heat to medium-low, cover and cook. In a large frying pan, heat 2-3 tablespoons of oil over medium-high heat, saute celery until soft, add parsley and mint, stir well and saute for another 3-4 minutes. Add the sauteed vegetables to the pot, adjust the seasoning, add more water if needed, cover and continue cooking for another hour and a half or when the meat is fully cooked. How To Cook A Popular Persian Food ( Ash Reshteh ) In The Rural Way 🤍 This is the recipe of a delicious and traditional Iranian food named Dizi or Abgoosht 😋🍲😋 : Ingredients : Lamb meat : 500 Gr Lamb tail fat : 100 Gr Chickpea : 1 Glass White bean : 1 Glass Onion : 1 Potato : 2 Garlic : 1 Omani lemon : 4 Turmeric : 2 Jam spoons Salt : 1 Jam spoons Black pepper : 1 Jam spoons Dried mint : 1 Jam spoons Vegetable oil : 2 Table spoons Tomato paste : 2 Table spoons Cinnamon stick : 1 We ate our Dizi with these: Pepper pickle Garlic pickle Buttermilk Fresh vegetables Sangak bread Recipe: Put chickpea and white bean in water for 12 hours and then pour its water away.Then chopp the meat and tail fat and put them all together in the pot.Add onion and garlic and omani lemon and turmeric and black pepper and cinnamon stick and Water.Now put the pot on the stove.after about 2 hours add potato to it.Then fry the tomato paste and dried mint in vegetable oil and smash the tail fat in a bowl and mix them together.Now add them to the pot.ater about 30 minutes your broth is ready. Come with me on my fun Iranian village food experience in Yazd, Iran! Mr. Taster and I would be seeing how a couple of different dishes are made, including shooli ash, which is a popular dish in Yazd, as well as abgoosht (dizi with eggplant), and more! 📝SUBSCRIBE TO MY NEWSLETTER: 🤍 🌎 MY TRAVEL BLOG: 🤍 After meeting the team, we headed inside the Saraye Jahangara Traditional Hotel, which is a large, traditional house. The grounds were beautiful! They had some beautiful peacocks and a pretty white bird. There were also gardens, a fountain, outdoor seating, a resting area, and more. They served us some amazing musk willow tea, and then the woman started cooking. They had lamb, tomatoes, potatoes, onions, chickpeas, turmeric, salt, and pepper ready for the dish. They start by boiling the lamb for 10 minutes before adding black pepper and turmeric. The cooking process takes 2 hours! For the other stew, they had lamb, split peas, apricots, and more! I tried an apricot, which was nice, sticky, and meaty! Then, the woman added turmeric, black pepper, quince, and split peas to the pot. Later, she adds the apricot! While we waited for them to cook, we started a fire in the sun so we could make some coffee! It was so hot out! It was so hot, they covered our seating area to give us some shade! These dishes are unique to Yazd, so they’re a must when you come here. We had more musk willow to cool off. Then, they put cacao, sugar, coffee in a pot. It usually takes 2 hours to prepare properly, but we’d be shortening it. After adding tomatoes and potatoes to another dish, I saw them making rolling out balls of a local bread dough. They add herbs to it and cook it in a tanoor oven. I tried my hand at putting the bread on the wall of the tanoor. Then, they take the bread and lower it toward the fire to let it char a bit. The bread was nice and fluffy and contained some tasty coriander. It was so good! I couldn’t get enough of it. The sesame seeds in it were also fantastic. Next, they started on the shooli ash, which is the must-have in Yazd. It’s a beetroot stew, but the beets are white here! Meanwhile, after 2 hours of boiling the coffee, they add cardamom and rose water. The process of making these dishes was pretty long and complicated. We had a Yazd cake with the coffee. It was a great pairing! I loved the sweetness of them both. The rose and cardamom made it the tastiest coffee I’ve ever had! Back at the quince stew, she added pomegranate paste and saffron. Then, they make a wheat flour slurry to add to the ash. Everything looked and smelled amazing! For. The lamb stew, we started by sucking the bone marrow out of the bones while they mashed it up. Finally, it was time to eat! We started with the shooli ash. You add pomegranate paste to it. It reminded me of borscht, but had a sweetness to it. I loved the crunchy beetroot! Then, we took some crunchy bread and added the abgoosht and meat juice on top. The bread soaked it all up! The tahdig were like crispy rice patties. I loved the mix of textures! Next was the saffron rice and khoresh-e beh (quince stew). It was very balanced! Next was the lamb stew with bread. The cinnamon added some sweetness.
