Today I am going to show you how to make south Indian idli dosa batter for soft and spongy Idli and Dosa. Ingredients for 2 Kg Spongy Idli and Dosa batter. 1) White Rice - 2 cups 2) Urad Dal - 1 cup 3) Methi - 1 table spoon 4) Cooked Red(Matta) rice Note: You can use any boiled rice if you don't have red rice. What is idli rice? You can use any white rice. But most of the time we use "Super Tas" brand (May be it won't available in your place ) How to make soft idli at home (I have tried to explain this in hindi) ? The key part of soft idli is adding boiled prepared rice while grinding and the proper fermentation ? Can idli batter recipe be followed for dosa batter? Yes, it is. The typical practice in our household has been to make idlis from the freshly fermented batter and store the remaining batter in the refrigerator for dosas. Idlis made from refrigerated batter tend to be less soft than the ones made the same day the batter has fermented. How long does it take to steam idli? Approximately 15-20 minutes depending on the steamer you use. How long to soak the rice? 6-7 hours. You can soak them overnight as well. How long to soak urad dal? 6-7 hours. You can soak them overnight as well. Also you can soak this with rice as well What if the batter doesn’t ferment? Does the batter appear too thick? Add spoonfuls of water and whisk it well. If it doesn’t ferment after 18 hours, refrigerate the batter and make dosas. Is Italy dosa batter and idli dosa batter are same ? Yes, Some people write italy dosa instead of idli dosa . How to prepare idli dosa batter ? You required either one of the equipment for preparing idli dosa batter In my childhood we were using a big stone mortar/pestle to grind but not many people use it anymore. The options that are now available Electric Wet stone grinder – It will be more similar to old stone mortar. Indian Mixer - The advantages of this is very fast. How to make Idli ? 1. On a high flame bring enough water to boil in an idlly steamer(Recommended) or idli pressure cooker 2. Apply oil on idli plate lightly to avoid stick with idli 3. When water begins to steam up, place the idli plate in the steamer to make it slightly heat to avoid idli stick with plate 4. Then gently mix the idli batter few times and fill the idli mold with batter 5. Then do the steps 2 -4 with all idli plates 6. Cover the steamer properly with lid and cook it for atleast 15 min. 7. Now your authentic idli is ready. So you can switch of the flame and remove all idli plates and keep it for 2-3 min to cool down. 8. Once its slightly cool down you can gently remove with spoon and serve with coconut chatney or Sambar. From where you can find more authentic kerala recipes ? Ingredients for Idli Ponni Rice (parboiled) - 1 cup (200gm) Raw Rice - 1 Cup (200gm) Black Gram (Urad Dal) - 1/2 Cup Fenugreek Seeds - 1/2 tsp salt Banana Leaf or white cloth Ingredients for Chutney Powder Red rice (matta Parboiled) - 1/4 cup black gram - 2 tbsp. gram dal - 2 tbsp. pepper - 1 1/2 tsp red chilly - 3 nos curry leaves sesame seeds (black) - 1 tbsp cumin seeds - 1/4 tsp asafoetida powder - 1/8 tsp salt Ingredients for Coconut Chutney grated coconut - 1/2 Cup Green Chilly - 1 no Red Chilly - 1 no Shallots - 3 nos Roasted Gram dal - 1 tbsp. Ginger root - 1/2 "' pc Salt
Ingredients Urad dal -1/2 cup Asafoetida -1 small piece. Coriander seed – 1 tsp Dry red chilli – 4 ort 5 nos Fenugreek -1 tsp Curry leaves – 3 sprigs Grated coconut – ½ cup Onion – 1 nos Drum stick – 3 nos Banana – 1 nos Tomato- 1 nos Ladies finger – 2 or 3 nos Green chilli – 3 or 4 nos Brinjal – 1 nos Pumpkin – ½ piece Tamarind – small size Oil – 2 tbsp Salt – to taste Method Heat oil in a pan add asafoetida piece and fry it well and keep a side Then we use the same pan and add coriander seed,dry red chilli,fenugreek seed,curry leaves, and grated coconut and saute well till they colour change to light brown and keep a side. Then we have to grind the roasted coconut ,asafoetida and other ingredients into fine paste and keep a side. Heat a heavy bottom pan add onion and green chilli . Then we have to add vegetables like drum stick, pumpkin, brinjal ,ladies finger etc Again we have to add dal ,1 table spoon of oil ,salt and water ,mix well cover and cook till the vegetables are well cooked. Ones it is ready we have to add grinded fine paste of roasted coconut and little amount of water mix well and cook for 5 to 8 minutes. Take a small bowl add tamarind and water squeeze well and drain the water ,then we have to add the tamarind water into the sambar pan and mix well. Heat oil in a small pan add mustard seed ,let crackled Add dry red chilli and curry leaves saute well and pour into the sambar pan and mix well. Remove from heat and serve with idli idli Ingredients Rice – 1 kg Urad dal – ½ cup Salt – to taste Water – ½ cup Method First we wash and clean rice and urad dal separately Then we have to soak rice and urad dal for 2 to 3 hrs separately Drain excess water and grind rice and urad dal into smooth batter Transfer the batter to a large bowl .keep aside for 2 to 3 hrs After 2 to 3 hrs add 1 tsp of salt and mix well . Heat water in a idli steamer Then we have to scoop the batter into idli plate greased with oil. Then place the idli plate into the steamer and steam for 10 to 12 minutes. Finally soft idli recipe is ready remove from heat and set a side. Dear Traditional Lifers, This Video is EP20 You are going to watch 2 days of our routine in this video, On the 1st day noon Valar has started preparations to make Idli batter for the next day breakfast, so in the morning itself she has soaked all the ingredients needed to make Idli batter cox all those should be soaked up to 5 hours then after doing some works she has started grinding batter by our Tamil tradition method using stone grinder, meanwhile I was in our land in the preparation to plant rice plants next day and while returning home I have got a special item for Valar given by my aunt, it’s her favourite so she enjoyed apply it on her hands (Henna) We slept after finishing our dinner, forgot to say-henna looks very beautiful on Valar’s hand :) On the next day morning, I requested some of our villagers to come to our land to plant rice plants so they arrived around 7 and started planting it meanwhile Valar started cooking idli and the side dishes (idli sambar, coconut chutney and green chutney) not just for words- really all those tastes fantastic, usually I feel mixing coconut chutney with idli sambar and taking with Dosa feels yummy but this time I felt green chutney mixed with idli sambar tastes superb, I must say this- you should try this combination to feel YES IT’S GOOD, after finishing our breakfast together I went to our land & joined hands with our villagers to produce rice! 🌱Also we plant a tree in this video on behalf of you “For us and for our earth against Global Warming”, In upcoming videos we will be planting trees regularly and just imagine these tress are belongs to you🌱 The Traditional Life, Is Happy to share that we are creating “An Organic Food Forest”, As a symbol of Your Love & Support.. Ingredients Raw rice -1 and 1/2 glass. Urad dal – 1 glass. Salt. Shallots. Green chilies. Ginger. Curry leaves. Potato. Tomato. Eggplant. Onion. Hing. Cucumber. Drumstick. Lentil. Turmeric powder. Coconut oil. Fenugreek powder. Cumin powder. Tamarind. Chili powder. Method 1)Soak raw rice and urad dal. 2)Chop Shallots, green chilies, curry leaves, and ginger. Clean and cut all vegetables. 3) Cover and cook lentils with hing, curry leaves, turmeric powder, salt, and coconut oil. 4) When the lentils are half cooked add in vegetables. When vegetables come to boil add in salt, fenugreek powder, cumin powder. Soak tamarind and add it to the vegetable. 5)Heat chili powder, and coriander powder. Mix the heated powder in water and add it to the vegetables. 6)In another pan, heat oil. Splutter mustard, saute in shallots, dried chilies, and curry leaves. Add the fried shallots mix to the sambar. 7)Add ginger, shallots, curry leaves to the idli batter. In an idli steamer, pour the batter and steam it. Idli and sambar are ready. ആവശ്യമുള്ള ചേരുവകൾ പച്ചരി-ഇരുനാഴി ഉഴുന്ന് -നാഴി ഉപ്പ് ഉള്ളി മുളക് ഇഞ്ചി കറിവേപ്പില ഉരുളക്കിഴങ്ങ് തക്കാളി കത്രിക സവോള കായ വെള്ളരിക്ക വഴുതനങ്ങ മുരിങ്ങക്ക പരിപ്പ് കായം മഞ്ഞൾപൊടി വെളിച്ചെണ്ണ ഉലുവപ്പൊടി ജീരകപ്പൊടി വാളൻപുളി മുളക്പൊടി തയ്യാറാക്കുന്ന വിധം 1.പച്ചരിയും ഉഴുന്നും വെള്ളത്തിലിട്ട് കുതിർത്ത് അരച്ചെടുക്കുക. 2. ഉള്ളി, മുളക്, ഇഞ്ചി എന്നിവ ചെറുതായി അരിയുക. കറിവേപ്പിലയും ചേർക്കുക. ഉരുളക്കിഴങ്ങ്, തക്കാളി, കത്രിക, സവോള, കായ, വെള്ളരിക്ക, വഴുതനങ്ങ, മുരിങ്ങക്ക എന്നിവയും അരിഞ്ഞു വെക്കുക 3.പരിപ്പ് കഴുകി വെള്ളമൊഴിച്ചു അടുപ്പത്തു വക്കുക. അതിലേക്ക് കായം, കറിവേപ്പില, മഞ്ഞൾപൊടി, ഉപ്പ്, വെളിച്ചെണ്ണ എന്നിവ ചേർക്കുക. എന്നിട്ട് അടച്ച് വേവിക്കുക. 4. പയർ പകുതി വേവ് ആയിക്കഴിയുമ്പോൾ അരിഞ്ഞു വെച്ച പച്ചക്കറികൾ ചേർത്ത് അടച്ചു വേവിക്കുക. തിളച്ചു കഴിയുമ്പോൾ ഉപ്പ്, ഉലുവാപ്പയോടി, ജീരകപ്പൊടി എന്നിവ ചേർക്കുക. വാളൻപുളി വെള്ളത്തിൽ ലയിപ്പിച്ചു അതുകൂടി ചേർക്കുക. 5.മുളക് പൊടിയും മല്ലിപൊടിയും ചട്ടിയിട്ട് ചൂടാക്കുക.ശേഷം വെള്ളത്തിൽ കലക്കി, വേവിക്കാൻ വച്ച കഷ്ണങ്ങളിലേക്ക് ചേർക്കുക. 6.തളിക്കാനായി ചട്ടി അടുപ്പത്തു വച്ച് എണ്ണ ഒഴിക്കുക.എണ്ണ ചൂടാകുമ്പോൾ കടുക് പൊട്ടിക്കുക. ക്രമത്തിൽ ചെറുതായി അറിഞ്ഞ ഉള്ളി, വറ്റൽ മുളക്, കറിവേപ്പില എന്നിവ വറത്തു തിളക്കുന്ന സാമ്പാറിലേക്ക് ചേർക്കുക. 7. ഇഡലി മാവിലേക്ക് ഇഞ്ചി, ഉള്ളി, കറിവേപ്പില, ഉപ്പ് എന്നിവ ചേർത്ത് ഇളക്കുക. ഇഡലിത്തട്ടിൽ വെള്ളമൊഴിച്ചു ചൂടാക്കി, എണ്ണ ഒഴിച്ച്, മുകളിൽ മാവൊഴിച്ച് അടച്ചു വേവിക്കുക. സ്വാദിഷ്ടമായ നാടൻ ഇഡലിയും സ്പെഷ്യൽ സാമ്പാറും തയ്യാർ. Ingredients Rice -2 cups Urad dal - 1 cups Salt - 1 or 2 tbsp Oil - 2 or 3 tbsp Method Take a bowl, add raw rice and water Again, rewash them two to three times. Then soak for twohour. Then we have to take another bowl, add urud dal and water , Then soak for two hours. After two hours, drain the excess water from the soaked ingredients and keep them aside. Then blend the soaked raw rice and urud dal with a stone grinder into a frothy, thick, smooth batter Then , set aside until four hours for the fermentation process. Heat water in an idli steamer,then place the idli plates . cover and boil them well. Then take a bowl and pour some of the fermented batter into it. Then add some salt and mix them well. Take a half coconut shell and grease it with some oil Then batter is poured into the coconut shell. Then place the coconut shell onto the steamed idli plates one by one. cover and cook for 8 to 9 minutes. Ones done turn off the flame and remove the coconut shell from the steamer. Take a spatula and remove the idli from the coconut shell. Serve and enjoy the tasty coconut shell idli with coconut chutney. Killi Sambar Toor Dal - 1 cup Onion - 2 nos Shallots - 12 to 13 nos Tomato - 1 nos Tamarind - small ball Dry red chilli - 3 or 4 nos Sambar powder - 1 tbsp Asafoetida powder - 1/2 tbsp Turmeric powder - 1/2 tbsp Mustard seed - 1 tsp Fenugreek seed - 1 tsp Salt - 1 or 2 tbsp Oil - 2 or 3 tbsp Firstly, we have to wash and clean the toor dal Then take a pan, add cleaned toor dal and water . Cover and cook them well. Take a bowl, add tamarind and water. Soak for 10 to 15 minutes. Remove the lid and check whether the toor dal is cooked or not. Once the toor dal is well cooked Take the pan off the heat and set it aside. Heat oil in a pan . Add mustard seeds and fenugreek seeds.allowing them to splutter Then add dry red chilli and curry leaves . Saute for few seconds. Add chopped shallots and sauté them well. Then sprinkle some salt and sauté them well Then add the chopped tomatoes Saute them till they become soft. Then squeezed and drained the tamarind water ,set them a side. Then add curry powders like sambar powder,asafoetida powder and turmeric powder ,Sauté them well pour the squeezed tamarind water into the curry pan, mix them well. Then add cooked toor dal and combine them well. cover and boil them well. Take the pan off the heat and set it aside. Here I share my foolproof recipe with video and step-by-step photos that will help you in making the best idli. Ingredients 240 ml cup Rice 120 ml cup Urdu 60 ml Sago ½ spoon sugar salt ½ spn sesame oil 1 cup ice cubes Instructions Soak rice and Urdu also add sago into it and fill it with water and rest it for 5 hrs. after 5 hrs grind the Urdu first and then the rice. When we grind the rice also add ice into it and grind it into a thick paste. mix both the batter together and keep it in a container for over night.In the morning the batter will be ready add sugar salt and sesame oil into the batter and mix well. Our batter is ready now we can start preparing idli . Pour the batter into a Oil greased idli pan and cover it after few minutes our idli will be ready. Full written recipe for Thatte Idli & Molagapodi Prep time: 10-15 minutes (excluding soaking & fermentation time) Cooking time: 25-30 minutes Serves: 6-8 people Thatte Idli Ingredients: PARBOILED RICE | उकड़ा चावल 3 CUPS URAD GOTA | उरद गोटा 1 CUP SABUDANA | साबूदाना 2 TBSP POHA | पोहा 1/3 CUP FENUGREEK SEEDS | मेथी के बीज 2 TSP WATER | पानी 3 CUPS (ADD GRADUALLY) – FOR GRINDING WATER | पानी 1 CUP (ADD GRADUALLY) – FOR GRINIDNG SALT | नमक TO TASTE BANANA LEAF | केले के पत्ते AS REQUIRED OIL | तेल Method: Transfer the rice & dal into two separate bowls & washed them well until the water turns clear. Once washed discard the water, then add sabudana, poha & fenugreek seeds into the bowl of dal. Add fresh water in the rice & dal bowl & soak them overnight (6-8 hours) separately. Once soaked discard the water & now you must grind the dal & rice separately. Add the soaked rice into a mixer grinder jar & grind it into a semi fine consistency while adding the water gradually, once grinded the rice batter should feel like it has fine semolina in it once you feel it between your fingers. Transfer the rice batter into a large stockpot & then add the dal along with the sabudana, poha & fenugreek into the mixer grinder jar & grind it into a fine paste while gradually adding the water. Transfer the dal paste into the same stock pot as the rice batter, mix both the batters using a whisk, the batter should be of flowing consistency. Once you have prepared the batter, cover it & place it in a warm corned of the kitchen & let it ferment, the time of fermentation completely depend upon the weather. The batter ferments withing 8 hours during summer & it may take upto 12-15 hours during winter. Once the batter has fermented it will become double or almost triple in size, stir the batter very gently using a ladle until it turns smooth, make sure you don’t overmix the batter. Add salt to taste & mix well again, you batter for thatte idli is ready. You can use thatte idli stand to make these like how I am using, or you can also just use lids of steel jars or steel plates. Place a piece of banana leaf in the plate & then grease the plate with oil. Pour the batter to fill half of the plate, place all the plates into the stand & place the stand in the steamer, let the idlis steam for 15-18 minutes. Once steamed, check by touching the surface of the idli, if it doesn’t stick then your idlis have steamed, you can also insert a knife, the knife should come out clean. Remove the stand from the steamer & let the idlis cool down slightly the scrape the sides using the back of a spoon or a knife then demold the idli, remove the banana leaf. Your soft & spongy thatte idli is ready, serve it with ghee, molagapodi & coconut chutney. Mologapodi CHANA DAL | चना दाल 1/4 CUP URAD DAL | उरद दाल 1/2 CUP WHITE SESAME SEEDS | सफेद तिल 1/4 CUP BYADGI RED CHILLI | ब्यादगी मिर्च 10-12 NOS. SPICY RED CHILLI | तीखी लाल मिर्च 3 NOS. (OPTIONAL) ASAFOETIDA | हींग 1 TSP SALT | नमक A LARGE PINCH Method: Add the chana & urad dal into a pan & toast them over low flame until fragrant & then transfer them into a bowl. Further add the sesame seeds in the same pan & toast them over low flame until they get slightly golden in colour & then transfer them into the same bowl as the dals & cool them down completely. Meanwhile add the chillies in the same pan & toast them over low flame until they get hot & crispy, then transfer them into a separate bowl & let them cool down. Once cooled, break the stalks of the chillies & add them into a mixer grinder jar, grind the chillies into a fine powder. Further add the toasted dals, sesame seeds, asafoetida & salt, grind everything coarsely, make sure you don’t make a fine powder. Quilon Idli..! Ginger, Green chillies and curry leaf infused soft and fluffy Idli steamed in Portia leaves!! പൂവരശിലയിൽ പുഴുങ്ങിയ ഇഞ്ചിയും പച്ചമുളകും, കറിവേപ്പിലയും ആവാഹിച്ച മർദ്ദവമായ ഇഡലി..! തേങ്ങാച്ചമ്മന്തിയും, ഒരുപാട് കഷണങ്ങൾ ചേർത്ത് കുറുകിയ സാമ്പാറും ചൂട് ചായയും… അനുഗ്രഹം!! Raw Rice/ Idli rice- 500gm Urd Dal - 350gm Fenugreek seeds -3gm Beaten rice/ Aval/Poha - handful (or cooked rice) Wash and soak dal and rice separately for 6 hours Grind the Dal with little cold water and pour in a big pot Grind the rice,fenugreek seeds and beaten rice together and mix well the batter and keep the half for Dosa Ginger chopped-20gm Green chillies chopped-2 Curry leaves chopped- few Salt to taste Add the herbs to the Idli batter and mix well with hands and cover and keep it in a warm place for fermentation for 12 hours. Next day morning boil the water in Idli steamer/cooker Pour the batter in mould (use Portia leaves if available) and steam for 12-15 minutes and cool it down for two minutes and serve with Sambar and Coconut chutney!
